Okinawa soba is a beloved food enjoyed by people of all ages in Okinawa Prefecture. It is truly soul food! The thickness of the noodles, the flavor of the broth, and the toppings vary by region and household, making Okinawa soba a representative dish that has been passed down for generations. We adhere to traditional methods, continuing to preserve handcrafting without using machines. Although it requires effort, the chewy texture, resilient bite, the way it clings to the broth, the subtle aroma of wheat, and the smooth sheen of the authentic delicious noodles will surely resonate with your senses.
Yaeyama soba, as the name suggests, is consumed throughout the Yaeyama region, including the outer islands. While round noodles are the mainstream, flat noodles have also become popular recently. The broth has a hint of sweetness derived from bonito and pork bone, and it is unique to sprinkle with hipachi (island pepper) when eating. Toppings include Yaeyama kamaboko, soki, and sanmai meat. The sanmai meat used is distinctive, as Yaeyama soba features finely sliced sanmai meat. Recently, Yaeyama soba topped with plenty of vegetables has also appeared.
Ingredients
Noodles: wheat flour, salt, kansui, alcohol
Soba broth: salt, pork extract, bonito extract, sugar, seasoning (amino acids, etc.), (contains mackerel in some ingredients)
Instructions
1. Boil about 3 liters of water in a pot. While loosening, add one serving of noodles and boil for about 1 minute and 30 seconds.
2. Warm the attached seasoned pork in the bag in the water. Prepare the soba broth by pouring it into a bowl and diluting it with 270 cc of water.
3. Place the cooked noodles in the bowl and top with the warmed seasoned pork. Add kamaboko, green onions, and shredded egg or your preferred toppings. (Cooking time may vary depending on equipment and heat. Please adjust according to your cooking situation.)
Safety Warning
Nitrogen gas is injected into the noodle bag for quality preservation. If the broth appears cloudy, it is due to the pork extract and is not a sign of quality issues.
